What are marshmallows?
Who invented cotton candy? No one knows when marshmallows were invented, and their history can be traced back as far as 2000 B.C. The ancient Egyptians were the first to discover and enjoy this sweet treat, keeping marshmallows as a privilege strictly reserved for the gods and royalty.
Marshmallows are sugars, usually made of sugar, water, gelatin, air, and a whipping agent (usually protein). It is a soft and elastic candy. Marshmallows come from the sweet juice of the "mallow" plant, which grows in saline marshes near large bodies of water and is 2 to 4 feet tall.
What are some interesting ways to eat marshmallows?
1.
Enjoy fresh fruit pieces and marshmallows. Cut 1 lb (450 g) of fresh strawberries and 2 fresh bananas. Drain a small can of citrus and mix the sliced citrus with the bananas and strawberries in a bowl. Finally, place a cup (50 g) of mini marshmallows on top of the fruit salad. Cover the fruit salad and place it in the refrigerator until ready to eat.
If hiding the salad for a few hours, do not put the banana slices later.
2.
Prepare smores and graham crackers, chocolate, and marshmallows. Place graham cracker pieces and place chocolate pieces. Lay the toasted marshmallows on top of the chocolate and stack another graham cracker on top to complete the more.
This is a great treat if you are out camping.
3.

4.
Finish the hot chocolate with marshmallows. Prepare a cup of traditional hot chocolate, making sure the hot cocoa mixture is stirred into the hot water. Drop a few large marshmallows on top of the drink, like the other toppings.
For example, some people like to add candy, coffee, or nutmeg as their hot chocolate.
You can find more ways to sprinkle marshmallows on top of your favorite desserts, yogurt, ice cream, hot cocoa, etc.
One of the interesting facts about marshmallows is that more than 50% of them are roasted over a fire each summer. August 30 is National Roast, a Marshmallow Day.
The main ingredients of marshmallows
In the 19th century, marshmallows were made by mixing mallow root juice, egg whites, and sugar. Cornstarch was then added, and by 1940, AlexDoumak patented the marshmallow extrusion process, which helped speed up production and give marshmallows a variety of forms.
Today, the juice from the mallow roots is replaced by gelatin, and the basic ingredients of marshmallows include sugar, corn syrup, starch, pure water, gelatin, flavoring, and coloring.
Sugar.
The familiar white color is sucrose, and like the compounds that make up these three elements, sugar is a carbohydrate. It occurs naturally in most plants, especially sugar cane and sugar beets.
Bright glue.
Gelatin is the most common aerating agent used in the production of marshmallows. It is a natural protein derived from raw collagen and is a safe product. It contains 18 amino acids, some of which are important components of a healthy diet. When gelatin is combined with water, it forms a thermally reversible gel. This means that gelatin can melt and reset due to its sensitivity to temperature. Gelatin has a melting point of about 35°C, which is lower than the normal human body temperature of 36°C, hence the term marshmallow "melt with your mouth."
Glucose Syrup
Glucose syrup, also known as candy glucose, is a liquid sweetener that is well tolerated and has a wide range of uses. It is a syrup containing dextrin, maltose, and glucose. It forms growing carbohydrate molecules that all twist together, preventing the crystallization of other sugars and giving marshmallows a translucent appearance.
Purified water
Universal and main solvent mix all ingredients to make marshmallows. Water is added in the perfect proportion to the mixture. It is also the main lubricating ingredient and helps soften the marshmallow.
Flavoring
To give marshmallows different flavors. Different kinds of marshmallow flavors such as lemon, mango, watermelon, orange, apple, strawberry, and cocoa can also be made.
Color of food products
Food coloring, also known as color additives, is the key to making various colors of marshmallows.
Citric acid
Citric acid is an important ingredient in marshmallows and helps to awaken the flavor of marshmallows. It comes from citrus fruits and juices. It is also a preservative that ensures the long shelf life of marshmallows.
What is the process of making marshmallows?
Step 1:Cook with marshmallow ingredients.
Sugar: water, liquid glucose, sorbitol, corn starch, gelatin solution, etc.)
Step 2:Marshmallow inflation.
The continuous aerator adds the right amount of air to the mixture. It is the core part of the marshmallow production line as a whole.
Step 3:Color and aroma mixing.
The straight-line mixer avoids the error of each ratio by hand. Can make up to four colors/flavors.
Automatic injection.
Step 4:Spray starch in the first stage.
The former sprinkles starch on the conveyor belt. In order not to condense with the conveyor belt and absorb the moisture of the marshmallow mixture at the bottom.
Step 5:Marshmallow molding.
Marshmallows are extruded through a marshmallow extruder machine or a marshmallow depositing machine. During the molding process, foam is extruded through the extruder nozzle or deposition machine nozzle to produce the marshmallow shape.
Step 6:Marshmallow cooling.
After the marshmallow is formed, it is fed with a cooling belt.
Step 7:First stage of starch spraying.
Starch is sprinkled on the belt before cutting the knife. In order not to solidify with the cutting knife and absorb the moisture of the marshmallow mixture.
Step 8:Cut to necessary lengths (for extruded marshmallows only)
Set the length number, and the cut moves according to your command.
Step 9:Desizing.
After marshmallows are cut to the desired length, remove excess starch with starch screen conveyor and starch bucket.
Step 10.Marshmallow packing Marshmallow packing.
When the marshmallow is cool enough, it will be packed into bags.
How to make marshmallows in a commercial marshmallow machine?
Marshmallow kitchen includes syrup preparation system and mixed material cooling system; all steamers are a double jacket, the system has controller, hot water keeping, pump and cooling integrated.
The aerator is the heart of the entire marshmallow line. As the mixture passes through the aerator, it is mixed with the right amount of air to form marshmallows. The air mixed in the marshmallow must be triple filtered (water, oil, dust filter) to ensure the quality and shelf life of the marshmallow. The more air in the marshmallow, the lighter the marshmallow, so the aerator is the key to producing the ideal marshmallow.
The four-color/flavor composition system of marshmallows, when we see four colors of twist marshmallows in the market, they are mixed through this system. After aerating the marshmallow mixture through this color and flavor composition system, we can make colorful flavors and special tastes.
The marshmallow extrusion head has extruder nozzles that determine the shape of the marshmallow: twisted marshmallow or non-twisted marshmallow; changing the nozzles, you can get different shapes of marshmallows.
Marshmallow keeping machines can make filled marshmallows or non-filled marshmallows:jam-filled marshmallows, cream-filled marshmallows, chocolate-filled marshmallows are made by this keeping machine.
The marshmallow machine line has two corn starch coating machines that spray corn starch on the cooling conveyor belt.
The marshmallow removal starch barrel removes the excess starch. After removing the starch barrel, the marshmallow products are collected and aged on plastic trays for marshmallow packaging.
Marshmallow machine line selection
Automatic cooling and dehydration unit for marshmallow products are the equipment of choice for marshmallow manufacturers. It includes an elevator, multi-layer cooling tunnel, vacuum dust removal system, and recovery starch dryer (drying box), etc. This selected marshmallow equipment absorbs excess water, intensifies marshmallow drying and direct packaging.
